Wine belongs to the genre of alcoholic beverages. It is made from grape juices that are fermented. Grape has a typical natural chemical balance that helps them to ferment without the addition of any sugar or enzymes. Grape is crushed and mixed with various types of yeasts to produce this drink. Yeast performs the main work of fermentation with the help of sugar that are present in grape juice. This juice is ultimately converted into alcohol. The variety of grapes and the type of used determines the quality of wine that is produced.
Wines may also be produced using other types of fruits like apples or berries. The produced wine is named after the fruit that is being used in making the wine, like apple wine or elderberry wine and so on. These types of wine are collectively known as country wine or fruit wine. Starch rich materials are also used for making wine like barley or rice. They, however, resemble more closely to beer or spirits and are not considered to be wine as such. Aging ginger wine is associated with brandy. The term “wine” is used in this case to signify higher alcohol content in the drink instead of the process of production.
Generally the European specie of grape, Vitis vinifera, is used in wine making. When around 75% to 85% of the portion is made from these grapes it results in varietal wine rather than blended wine. Although blended wine is in no way inferior in quality to the former one.
Some hybrid species of grapes can also be used to make wine. The type of hybrid also determines the quality of wine produced. Wine tasting is very important work related to the production of wine. It is a very sensory work. The amount of residual sugar in the wine determines the sweetness of it. This sugar is present after the fermentation has been done. For example, dry wine has little or no sugar left after fermentation.
Grape juice and wine contain a complex mixture of organic molecules like esters and terpenes. Thus individual flavor of them can be detected. Experienced taters can easily distinguish between the flavors of a particular grape and that made from other elements of wine making. Some flavors of wine are imparted in the wine by the aging oak casks. Typically chocolate, vanilla or coffee flavor is imparted by them since these flavors are absent in the grape itself.
